Molasses Corn Cake

Request: My mother is 92 years old and going strong. She has been talking about and searching for a recipe for the molasses cake her mother made using cornmeal and spices. Any help in providing one will be appreciated greatly. Thanks in advance, Brenda

Editor’s Note: We are still looking for a recipe that has spices in it. Let us know if you have one.

Molasses Corn Cake

1 cup corn meal
3⁄4 cup flour
3 ½ teaspoons baking powder
1 teaspoon salt
1⁄4 cup molasses
3⁄4 cup milk
1 egg
1 tablespoon melted butter

Mix dry ingredients together in a bowl. Add milk with molasses, well beaten egg  and butter. Mix well. Bake in shallow buttered square pan in 425 degree oven for 20 minutes.
