Fresh Apple Cake

My
friend, Susan shared this Fresh Apple Cake recipe with me over 30 years ago after we bought
a bushel of apples on an impulse buy. We made many, many of these apple cakes from
the apples and froze them -- with plans to eat them all winter. Within days of
finishing the apple cakes my husband's employer transferred him overseas -- so all our
neighbors and friends got to eat these apple cakes instead of us! Whenever I
make this apple cake I think of that freezer full of fresh apple cakes.
Fresh Apple Cake Recipe
4 cups apples,
chopped fine
2 cups sugar
2 tsp cinnamon
1 tsp vanilla
1 tsp salt
Mix together and let
stand for 20 minutes.
Add the following:
1/2 cup cooking oil
2 eggs
2 cups flour
2 tsp soda
1 cup nuts
1 cup raisins
Mix well and pour
into a large, lightly greased loaf pan. Bake apple cake 45 minutes at 350
degrees. Sprinkle brown sugar over the top after baking 5 minutes.
